  1. Take a bowl. Add rava curd then mix them well.. Add salt as per taste.. Keep this batter aside..
  2. Take pressure cooker or idli cooker... Put some water in it... Switch on the flame....
  3. Take idli stand... Grease it with oil so that idli batter should not stick to it....
  4. Check the consistency of the batter and add water if it seems thick and make it smooth and at last add eno (just before putting the batter into the stand...) Mix the batter properly....
  5. Put the batter into the stand... Keep the stand into the cooker...
  6. Remove the whistle if you are making it in pressure cooker..
  7. Keep it on low flame for 20minutes....
  8. Meanwhile chop all the veggies....
  9. Take a pan or kadai.. Put some oil.. Once the oil get heated add mustard seeds and kadi patta...
  10. Add veggies... Saute them well.. Now add salt as per taste(remember salt is there in idli as well).
  11. Now add vinegar, soya sauce, ketchup and black pepper, then mix them well.
  12. Now add idlis... (You can cut idlis into 4pieces if you are using big stand... I have used small one) and mix them well..
  13. Garnish it with coriander.. Serve it hot with ketchup or green chutney..

  11. Cover the dish with its lid and transfer to the oven and cook for about an hour. Do check from about 50 minutes onwards as very oven differs with timings..
  12. Once the potatoes are cooked, remove the lid and cook uncovered for 20-30 minutes or until the potatoes are brown and slightly crispy on the top layer..
  13. If using, sprinkle with grated cheese of choice. Mature chedder and mozzarella work well. Cook until cheese is melted. Serve immediately..

  7. After frying when colour if each piece is changed, add curd which is mixed with dry spices. Don’t add salt now or curd will cuddle. After 2 minutes and frying add ginger garlic paste also keep frying/ stirring and then add salt..
  8. Now cover the cooker with inverted lid or a plate for 5 minutes on medium low flame, all moisture of curd should evaporate..
  9. Now add fried onion paste, mixed it well, keep frying and stirring slowly let gravy cover each piece..
  10. After 5 minutes, add water stir for a minutes and put lid with pressure weight and cook for 20 -25 minutes, go for 5-6 whistles. Meat needs to be tender and juicy..
  11. When it is cooked and wait for pressure be released on it own then add cashews-chironji-saffron paste. Let it simmer for 5 minuets in low flame.
  12. Garnish with fresh grated nutmeg / nutmeg powder (pinch) few drops of Kevra waxter and ginger julienne.
